I would have to say that The Guild has been the best Italian I've eaten... read more outside of Italy. Really, it was fabulous! I am still thinking about the antipasto platter and pizza I savoured 2 weeks ago. It is authentic and just like a pizza you would have in Rome, Venice, Siena, Greve, or Florence. The antipasto platter was excellent. The deli meats were just so good. My husband loved his pork belly; it was very meaty and flavourful. If you are in the area, GO!

    The restaurant itself is... read more fine. A small establishment in a local shopping village. Comfortable, albeit they kept the door open all evening despite the cold.

    The waitstaff were pleasant and tried their best.

    The food was the primary issue. Our entree was incredibly generous, which was lovely, but was something we could have put together ourselves at home. I couldn’t tell whether the cheese was locally sourced or store bought etc.

    Our mains were pretty terrible. Meat was all at once very dry and over cooked, but at the same time, the fat wasn’t rendered, leading to a tough and chewy exterior. Edible but not enjoyable.

    The pizza was severely disappointing. It is certainly a trend to produce a pizza that is almost a pool of liquid on the plate, and in that sense, this pizza was very trendy. Very, very wet, cheese and sauce essentially mixed together into a puddle on the plate as soon as you moved a slice. The crust was crispy enough, but the base was completely sodden because of just how wet the topping was. It was also relatively flavourless.

    The desserts were...not recommendable. It appeared they were trying to do modern twists on classic dishes, when they should have stuck to basics. Tiramisu, when done classically and well, is perfectly delicious. This ‘take’ on tiramisu was plain, dull, devoid of everything that makes a tiramisu indulgent (the taste of coffee, the sponge). Thin, dry slices of ‘sponge’ (ie biscuit) between sandwiches of flavourless cream, topped with a small quirt of what I assume was intended to be a coffee syrup, does not a tiramisu make.

    To add insult to injury was the price. We paid around $150 dollars for two people, which is what we would pay in a big city establishment for significantly better food. We would have found the food more forgiving if they weren’t pricing themselves like a genuinely great inner Sydney Italian.

    These are all relatively easy fixes, and I think The Guild would be a lovely spot if the menu was reworked. Pizza should not lack its structural integrity, and meat should not be overlooked with under rendered fat. Basic technique problems that can easily be fixed, to complement a nice location and interior and a friendly, attentive floor staff.

    We visited on a Wednesday evening and the restaurant was fully booked, so... read more we are glad we had booked ahead. Despite the full restaurant, service was efficient and meals came in a timeline manner.

    The restaurant set up has a couple of bar tables out front, outdoor dining in the courtyard and indoors. The kitchen is in a separate space across the courtyard but the open kitchen style meant you could see the chefs in action busily working away and the huge woodfired oven for their pizzas.

    Head chef Filippo Cozzani has curated a menu boasting interesting Northern Italian dishes that were rustic in their flavours and creation, yet modern and fine dining like in their presentation. They use Italian imported products and wines to provide an authentic
    Experience.

    Beginning with some outstanding wood fired scallops; with a soy and parsley emulsion, lime
    foam and a black squid ink coral. The flavour combinations worked beautifully and the scallops were cooked to perfection.

    The “Riso, patate e Cozze” was a potato rice dish that is a starchy / congee like consistency, flavoured with a good amount of lemon and zest with plump mussels sitting in the mix, presented with the squid ink corals and drizzled with a parsley chlorophyll dressing. It was an interesting dish that we haven’t seen before but it was definitely enjoyable.

    The eggplant dish was a charred eggplant filled with roasted vegetables; such as potato, onion sitting on a red capsicum mayonnaise. The charring of the eggplant gave the dish a good smokiness too it and the medley of vegetables were nice and softly roasted. It would be good to have this come with a slice of bread to mop up the extra sauce.

    We also had the “vegan maccheroni”, the pasta tossed in a zucchini and pesto sauce. A good vegan dish and for those not vegan, it comes with goats cheese, which probably steps this dish up another level.

    There’s so many different dishes we would have happily ordered as well as a long list of woodfired pizzas. This does give us the incentive to return in the future.

    They use certified organic flour and can also make pastas gluten free if needed.

    On our visit we didn’t have the space for desserts; but if you so, there’s your traditional Italian options like tiramisu, pannacotta or Nutella calzones.

    Drink wise, it is a bar so there’s an extensive wine list with plenty of Italian varieties and we like that the menu lists the best pairing for each food option. Plenty of beers and cocktails too that complements the dining experience.
